Although I’ll be dedicating future reviews to highlight specific items in detail, it’s safe to say that the dining experience at The Silos was nothing short of exceptional. Specifically, the "Hot Chicken Sandwich" was quite literally the best food I've ever had in any restaurant in Celina, hands down. Yes, it's that good. But again, more on that in the future reviews! During a recent visit to Ernestos in Prosper, Texas, I had the opportunity to try their signature dish: Pollo En Crema. Priced at less than $17, this dish turned out to be a revelation—far surpassing similar offerings at other popular dining spots around Celina. A Unique Take on a Classic Dish Ernestos’ Pollo En Crema impressed me immediately with its outstanding flavor and thoughtful presentation. Unlike the standard fare served with rice and beans, this dish is paired with perfectly prepared rice and lightly steamed vegetables, offering a refreshing and balanced twist. Every bite of the tender, well-seasoned chicken showcased the care and expertise behind the dish. The harmony of spices and textures created a dining experience that felt both innovative and true to its roots. More Than Just the Main Attraction While the Pollo En Crema stole the spotlight, Ernestos has much more to offer. The Top Shelf Margarita, with its crisp and inviting taste, complemented the meal wonderfully, and the tableside guacamole was a delightful bonus, prepared fresh and bursting with flavor. The Queso Flamedo, too, hinted at the culinary creativity on display—but I’ll save those reviews for another time. However, not everything was perfect. The chips and salsa, a standard accompaniment, fell a bit short of the high standards set by the rest of the meal. Additionally, while the food itself was exceptional, the atmosphere did have a minor drawback. The bright white lighting created an environment that felt slightly clinical, missing the opportunity to evoke a more authentic Mexican dining experience. Nonetheless, these small issues were easily overshadowed by the brilliance of the Pollo En Crema. Ernestos: A Piece of Prosper’s Culinary Legacy Situated at Celina Town Center (1050 S Preston Rd #112, Celina, TX 75009), Ernestos brings a rich heritage to the table. Born from a legacy of Italian culinary tradition and reimagined for today’s diners, the restaurant has quickly become a favorite in the area. Their commitment to quality and innovation shines through in every dish, and the Pollo En Crema is a perfect example of this dedication. Final Thoughts If you’re in or around Prosper and searching for an exceptional meal, look no further than Ernestos’ Pollo En Crema. Its unique twist—paired with rice and steamed vegetables—sets it apart from the competition, making it arguably the best rendition of Chicken in Cream I’ve ever experienced. Despite a few minor drawbacks in the sides and ambiance, the overall quality of the food more than makes up for it. It was an evening marked by high energy, creative networking challenges, and a touch of friendly competition—all without any real gambling. Guests earned “chips” in creative ways: simply showing up, exchanging business cards, and even locking in follow-up meetings earned them extra chips that could be exchanged for fantastic prizes. The event brought together over 70 local business professionals, entrepreneurs, and innovators. Attendees enjoyed themed drink specials, a mix of savory treats like Jazzy’s Tacos and refreshing Micheladas from Big Ku, and the overall festive atmosphere that made networking feel like a game rather than a chore. Hosted by local business leaders Ron Lyons of The Best of Celina and Ben Rogers of Rollertown, this gathering was a refreshing break from the standard networking formula. Attendees enjoyed lively drink specials while engaging in relaxed conversations, all without the pressure of delivering an elevator speech. The event was a game-changer for many who attended.
